Today on The Stay At Home Chef
I'm showing you how to make homemade nacho cheese sauce.
Nacho cheese sauce is ridiculously easy to make at home.
You're basically just making a cheese gravy,and what's not to love about cheese gravy?
Today I'm gonna show you two different ways to make it,
including with Velveetawhich gives a creamier texture,
and regular cheese like cheddar or pepperjack.
If you're using regular cheese like cheddar,or Monterey Jack, or Pepper Jack,
you'll want to grate 8 ounces of cheese,
and it does work better if it's freshly grated,
that way it doesn't have any of those additives that keep the cheese from sticking together
which also impacts its ability to melt.
Then I'm gonna put this all into a bowl soI can show you what to do with the Velveeta.
Velveeta is a processed American cheese,and it's kind of rubbery,
feels a little bit weird.
What you want to do with that is simply dice it up.
Now I know that processed American cheeselike this is not for everyone,
but I tell you what,it makes for some delicious nacho cheese sauce.
I'm showing you how to make both today soyou can choose which one you like.
They're both made the same way.
I already have 2 pots ready to go on the stove.
We'll get 2 tablespoons of salted butter meltingin each one over medium high heat.
Once the butter has melted,add in 2 tablespoons of all purpose flour,
and 1/8 teaspoon of cayenne pepper,if you want this to be a spicy nacho cheese sauce.
We're gonna whisk this in.
You want to let the flour cook for about 2 minutes
to take out some of that flour flavor.
Then you'll pour in 1 cup of milk.
Whisk this all in and bring it to a simmer,until it starts to thicken.
Now both of them are the same so far.
Really the only difference is that once thisliquid heats up and comes to a simmer
and starts to thicken,then you want to add in the cheese.
So this one I'm going to add in that processedAmerican cheese,
and stir until melted.
You should end up with a velvety smooth nacho cheese sauce.
Then if we move over here to the other one,we can add in our shredded cheddar cheese.
Then we'll go ahead and whisk until that cheeseis fully melted.
Be sure to keep on stirring until this oneis completely smooth as well.
Now let's take a closer look at both
so you can really see the subtle differences between the two.
So if you get a spoon of our sauce made with regularcheddar cheese,
you can see it is more liquidy and it hasa slight grain to it.
Whereas our nacho cheese sauce is thickerand smoother and creamier,
and it's also a lighter orange color.
In fact, the processed cheese one is moreof a yellow color,
while the cheddar is more orange.
Either way you make it,you are ready to eat.
Drizzle this up over some chips and you'regonna be in heaven.
